Pasta Cosmologies Book
Marmo Gallery and Desuetude Press are pleased to present Pasta Cosmologies by Adriana Gallo, an exploration of pasta-making as a profound human practice interwoven with cultural memory, ecological systems, and critiques of capitalism. Pasta Cosmologies serves as both an investigation and an offering, providing readers with traditional Italian pasta-making techniques, processes, ingredients, and recipes, alongside histories, theories, and a collection of found and author-made images.

Pasta Cosmologies builds upon the historical function of recipes as records of long-standing and evolving technologies, processes that are understood as dynamic rather than immovable and original inventions, leaving room for the world surrounding the cook to seep in. The goal is not to become an expert pasta maker but to develop, through practice, an understanding of a specific traditional labor and its embedded histories. While making pasta it is worth asking how engaging with traditional cuisine and food has the potential to encounter and better understand rifts between humans and nature and the forced alienation from the ecologies in which we are enmeshed.
