1 Cup 00 Flour (or all purpose)
2 Cups Semolina
pinch of salt
1 Cup Water
Mix the flour and salt and form into a mound on a table or in a bowl. dig out the middle to form a well. Add the water into the well and incorporate the flour and water slowly with a fork. Knead the dough until the moisure is evenly distributed and the dough is the texture of an earlobe. Roll pieces of the dough into logs, 1/4 inch in diameter. Cut into little hunks and shape with the end of a knife (watch the ladies in the video above or below to get a visual.) Boil in water until they float to the surface and serve with your favorite sauce.
